At -40˚C with the windchill, it was one of the coldest nights of the year.

Out of love, we suppose, our friends from Victoria braved Winnipeg's notorious reputation for sub-Arctic temperatures and came here in late December, 2013.

Their five-day trip landed in the midst of a record-setting cold snap.

An evening at Fusion Grill, and plates of winter comfort food, impressed the guests.

We polished our plates of coq au vin, Manitoba-raised lamb, pickerel cheeks, beet salad with goat cheese and pumpkin croutons, beet-stained local Arctic char and Northern pike caviar and grass-fed beef dumplings. Roasted mini potatoes, green beans and snap peas also played back-up.

Fusion Grill is the definition of Manitoba regional cuisine. Owner/waiter Scot McTaggart and chef Lorna Murdoch are an incredibly talented duo. They know food, they know wine and they know Manitoba. Murdoch is an alchemist in the kitchen. Her sauces are multi-dimensional, have depth and impact. She will leave you guessing just what she pulled from the pantry, herb basket and spice rack.

As a professional diner, I want to be dazzled. Murdoch and McTaggart make that happen.

Fusion Grill's menu is an evolving document. If you have a favourite, it very well may not be on tap on your next visit.

A night out should be memorable, especially when you're hosting out-of-town guests who are well travelled food and wine lovers.

We Winnipeggers know our city has gems in the restaurant scene. We know our food culture is underrated outside the city limits. When a local eatery like Fusion Grill can charm friends and family from afar, it puts Winnipeg one step closer to achieving its well-earned status as an emerging food city worth its salt.
